Homemade Strawberry Rosemary Jelly Recipe

When fresh strawberries are in season, it's also a great way to use them up.

Ingredients

  • Prep Time: 20 minutes
  • Cook Time: 30 minutes
  • Total Time: 50 minutes

Instructions

  • Combine the strawberries, sugar, and rosemary in a large saucepan.
  • Bring the mixture to a boil over high heat while constantly stirring.
  • Continue boiling for 1 minute, stirring constantly, after adding the pectin and lemon juice.
  • Remove from the heat and skim off any foam that has formed on the surface of the jelly.
  • Fill sterilized jars with the jelly, leaving 1/4 inch headspace.
  • Wipe the jar rims clean with a damp cloth and replace the lids.
  • In a boiling water canner, process the jars for 10 minutes.
  • Remove the jars from the canner and cool for 24 hours on a wire rack.
  • Check the jar seals and keep them in a cool, dark place for up to a year.
