Instructions

  • Combine the strawberries, sugar, lemon juice, and water in a large saucepan.
  • Cook, stirring occasionally, over medium heat until the sugar has dissolved and the strawberries have released their juices.
  • Bring the mixture to a boil, then reduce to a low heat and continue to cook for about 10 minutes, or until the strawberries have broken down and the sauce has thickened slightly.
  • Stir in the homemade pectin thoroughly.
  • Cook the jam for another 5 minutes, or until it has thickened to the desired consistency.
  • Allow the jam to cool slightly after removing it from the heat.
  • Transfer the jam to sterilized jars and place in the refrigerator to cool completely.
