Instructions
- Combine the sliced grapefruits, lemon juice, lemon zest, and water in a large saucepan.
- Bring the mixture to a boil over high heat, then reduce to a low heat and continue to cook for 45 minutes to an hour, or until the grapefruit rinds are tender.
- Remove from the heat and stir in the granulated sugar until completely dissolved.
- Bring the mixture to a boil in the saucepan over medium-high heat, stirring occasionally.
- Cook for 20-30 minutes, or until the mixture thickens and reaches 220°F (104°C) on a candy thermometer.
- Remove the saucepan from the heat and set aside for 5-10 minutes to cool.
- Fill sterilized jars with the marmalade, leaving 1/4 inch headspace.
- Seal the jars and process them for 10 minutes in a boiling water bath.
- Allow the jars to cool completely before storing them in a cool, dark place for up to a year.
