Instructions

  • Combine the plums, sugar, lemon juice, cinnamon, nutmeg, and salt in a large saucepan.
  • Cook, stirring occasionally, over medium heat until the sugar has dissolved.
  • Bring the mixture to a boil over high heat, stirring frequently.
  • Reduce the heat to medium-low and simmer, stirring occasionally, for 45 minutes to 1 hour, or until the mixture has thickened and reaches 220°F on a candy thermometer.
  • Remove the pan from the heat and set aside for 5-10 minutes to cool.
  • Fill sterilized jars halfway with jam and set aside to cool to room temperature.
  • Refrigerate the jars for up to 3 months.
